I've been smoking and grilling meats for years using gas grills, charcoal grills, offset smokers, etc. When I look at the equipment, it would seem that I have an addiction
My latest is a Smoke Hollow Gas smoker that Gander Mountain had on sale on black Friday. It's kind of small, but wasn't expensive, so I figured it was a good opportunity to try a vertical. After I seasoned it, I figured I might as well put it to use since it was still warm. I smoked some spare ribs. After about 3 hours in the smoker, I started to wonder and rediscovered this site and found out about the 3-2-1 method. I'm still discovering the temperature profile of the vertical and which rack level to use. I think that's one of the things I really enjoy about this hobby is that I'm usually learning something, even when I think I have it down pat. The other thing is that no matter what you do, you can usually recover from it and everyone will still love the output.
