Hi, I'm PhilfromEngland, but Phil is fine.   My son lives in Texas and brought over for me a Camp Chef Smoke Vault (18").  I'd had some of his smoked meat and thought it was great.  I had tried to get a decent hot smoker in the UK but boy was that hard. The prices are high and they are difficult to get hold of.  So, as he was coming over for my birthday (60th) he offered to bring one with him! This was the baby he brought!  I used it (with his help) to smoke pork, beef and turkey and the taste was wonderful - everyone commented on how good it all was. So, I'm going to be left to my own devices to do the cooking now and start tomorrow with beer can chicken and have checked the site for some thoughts on baked potatoes to go along with it. I want to cook some ribs but the UK are rubbish at selling good quality ribs - everything that is sold as 'ribs' has so little meat. I think I'll need to chat to my butcher and get him to cut them the way i want. Very little smoking is done in the UK - privately that is. But it would soon catch on if they knew what they were missing and the prices were ok. Anyway, this site looks just what i need to get all the information I could ever want - Ill be back very soon! Thanks for all your ideas.

Hi ,

Bexhill - South East England, on the coast not far from Brighton.

I'll definitely check out the course mentioned - sounds just what I need.

No chinese butchers that I'm aware of. Had enough of a hassle asking for tri-tip and it took a bit of explanation and wasn't impressed with what they came up with.
