That last batch turned out so good did another. Had hard time finding good green ones and had to settle on few that where starting to turn. Ended up spending $15 for this batch. This pretty easy to do and so good. The Catfish places around here have it but only give you a thimbles worth. Ran out of liquid last time so made 1.5 batch and had some left over. Here the recipe:

Cut tomatoes up and add salt. Put in fridge overnight. Drained and rinse. Added layer of onions, jalapeno and tomatoes until full. Pack in the best you can. Poured hot liquid into jars and seal. Placed jars in boiling water for 15 minutes. If Using cane sugar use 2 5/8 cups.

5 lb green tomatoes
1.5 large sweet onion
6 jalapeno's
1/3 cup pickling salt
4.5 cups cider vinegar
1.5 cup Allulose sugar
1.5 cup Monk Fruit sugar
1.5 teaspoon celery seed
1.5 tablespoon mustard seed

Now onto the Hatch Peppers. Roasting and freezing and dehydrating some to make a seasoning with.

I always do clean ups on gas grills every few months to prevent grease fire. Never ready had any problem with kettle as I usually turn vents to get ashes to go down into catcher. I did vortex wings last time and did not scrap ashes down before using.
Just got my hatch peppers on and hear it comes. Grease fire. Boy those are no fun. Managed to get peppers off until fire went down. Knew I should of just used broiler. Hopefully they will not taste like burnt grease after I clean them!

Looks interesting. Is it used as a kind of side dish? You mentioned catfish.
The Catfish restaurants is where I first had it. They all serve it around here. I been eating it on the side with other things. I caught some Sand Bass yesterday that I will making tonight and it goes well with any fish or seafood.
 
Brian I’ve always toyed with the idea of green tomato pickles at year end and never done them. Those look amazing.
