This recipe is from my Mama.....and is the one that never failed to please. Its great as a relish on peas...veggies....or meats too!
Green Tomato Chow-Chow
1 gallon of cabbage
1/2 gallon of green tomatoes
12 onions
6 green bell peppers
6 red bell peppers
3/4 to 1 cup salt
Chop veggies, and mix well. Put a layer of veggies in an enameled pan or a huge glass jar and sprinkle with salt. Repeat until all veggies are used and the last layer is covered with salt. Let stand overnight. Drain Well.
In a separate pan put:
1 gallon cider vinegar
4 cups sugar
1/2 cup ground mustard
6 Tbs white mustard seed
3 Tbs celery seed
1 Tbs whole cloves (tied in a cheese cloth bag)
Heat to boiling, add the drained veggies and cook slowly until tender (about 1/2 hour) Pack in hot pint canning jars. Adjust jar lids and bands. Process in Waterbath canner (212*) for 10 minutes.
Sorry I don't have a picture of it. Haven't made any in years....but this is a no-fail one for sure!
