Howdy all! I'm a smoking rookie, got a new MES30 for (a little before) Xmas, have done a few butts and a couple of turkeys. Thanks to guidance from the forums, my family really enjoyed the 27# bird I brined and smoked for Christmas dinner. I have really enjoyed the wealth of info on here, shout out to Pops especially! I selected my "bamaQ" name before I realized there was already a "BamaBBQ" (ironically I also grew up in Huntsville), didn't mean to clone your name, I would be glad to change if there is a way. Live in Tuscaloosa, home of Dreamland BBQ and the lesser known but maybe better Archibald's, and of course the Crimson Tide! So Roll Tide, Roll Call, and Roll Smoke!
