Yesterday i spent the day doing mods to my oklahoma joe. I added a chimney extension, two additional thermometers closer to grate level, and a baffle and tuning plates. I started a fire to season my plates without the baffle installed. Both thermometers were very close to each other in temp. Each was installed two inches from the ends of the door. When installed the baffle the temp at the end of the firebox was substantially higher than the other end. The only thing i can think of is that there is about a half inch gap between the smoker and the baffle on each side where heat is escaping. It somewhat defies logic that the temps were even without the baffle and and uneven with the baffle. Any help or suggestions would be appreciated. The bottom pic shows the gap. Its right below the thermometer on the fir box side.
