Found a used Charbroil offset smoker for free on Craigslist last year and just now got around to using it. Did a few mods to it and pretty happy with it. Still trying to dial it in, got the accross the grate temps to single digit differences, now trying to dial in how much charcoal and wood to add. Any tips would be helpfull.

Smoked cheese, chicken wings, and mac and cheese the other day.
 
Let’s see how the fire is going in there. My intake and exhaust stay wide open and I just put in the amount of wood I think is need and when it’s needed that’s it. I don’t do anything to the meat just run the fire box and peak on my oven gauges. Just takes practice. You don’t need any charcoal just wood. Smaller sizes can make it easier to get coals then bigger pieces. Don’t let the coals get to small or fire go out to much before putting a new piece of wood on.

This is how I build my fire. The meat is actually on the racks already. I always put the meat on before starting my fire. You shouldn’t need to waste time and fuel getting the smoker to temp. I prefer using wood and a weed burner, I cut all my wood myself so it just cost me fuel and time for my cooking wood, never has charcoal in this smoker

when the piece in the fire box is about to break apart I do so usually with my preheated split and break it up get the coals in a pile and toss the new split on top. Very easy
