I'm fairly new to smoking and over the weekend I did a brisket and turned out pretty good. I could not get the temp of the GOSM below 225-230. I it turned as low is it would go but temp woul dnot go below 225-230. I was hoping to smoke it around 200. Any help would be appreciated.

Did you have your vents open or closed and did you have water in the water pan?

Also were you depending on the thermometer in the door?

If so you should check it with a digital as the thermometers which come with smokers are notorious for being way off...

I had the vents closed to the tabs, I had water in the pan. The thermometer on the outside was reading 200 but I did put one inside that I have checked for accuracy in house oven and it was the one that was reading 225-230.

Top vent open??

Depends on the weather during the summer I can't get my GOSM below 220-225

I also have a Gosm and havwe tried to cold smoke I see you have tried to close the vents have you tried to adjust the gas flow. The handle on the tank itself try that one or crack the door open maybe.

Have had very minimal success cold smoking with my GOSM. What I ended up doing was putting a piece of black pipe with a union and I hook up my Big Kuhuna to it (has male side of union) when cold smoking or when I want extra supplimantal smoke.

Porkypas.com is where I got it and it works great. No fighting for low temps as you are only using the GOSM as the smoking cabinet. No flame.

Good luck!
