Went with the old fail safe pork butt this afternoon. Coated with Everglades rub then McCormick Cowboy rub then brown mustard.
Cooked on Apple (of course) in the open for 6 hrs then wrapped for another hr.. until 190.
Rested for half hr . Then eatin time ! Little offset smoker at 300 give or take 50 degrees. No complaints from eaters. LOL
 
It sounds like it was some good sliced pork.
