Ok so a few smokes in on my new stick burner and want to know being new to (all wood) smoking. What kind of smoke am I lolling for? When I shot my smoker down a bit to control the temp I get a small amount of white smoke. Any thoughts on type of smoke I'm looking for? My COS I had before I just ran with this one is different. Picks included. thanks.
 
I just now saw this post. With my offset stick burner, I usually don't have much smoke at all. What smoke I have is TBS. I keep good air intake and pre-heat my splits. You mentioned "all wood" and just to be clear, I use lump charcoal to establish a good coal bed while I'm warming everything up and then start my splits and smoke wood chunks.

That's what I am doing as well. Starting with a 50/50 mix of lump and KBB then I'll add sticks as I go and it ends up being all wood to the end. Maybe less fuel and more air on the next one and get rid of that little bit of white smoke. Do you control your heat with dampers or amount of fuel and let it roll?
 
Unless I'm doing a low temp cook, my dampers are always open. I control my heat with the size of my fire.
