gona do some smoking the next few days

We ran out of pulled pork a couple of months back and have been wanting to fire up the smoke and throw a couple of butts in there. Unfortunately, we had a week winter and the bears went to bed late and got up early. I smoke the butts for 17ish hours and the bears have been coming out of the woods as there's not many berry for them but plenty of food in the garbage cans (I keep ours in the garage until pick up days).

We've had a bear for the last month or so around our neck of the woods. They usually come out at night but this year they are out any time of the day looking for food. Plus, to make matter worse, they are extra hungry as they are trying to beef up for winter.

Looks like I will have to wait until after the first real snow we get before I can fire up the smoker over night.

I'm a bit jealous of you.
 
my wife dont like things as smoky as i do is all.

pork sirloin chops got the first attention. slathered them up friday and smoked yesterday early afternoon. had some bellas on grill as a saide. i munched on them till bedtime. lol fell asleep in chair watchin a western. fishin smokin eatin drinkin makes a big long day anymore. lmao
 
the sirloins and bellas plate. no sauce needed! usually i batter and fry these sirlion chops. they are more tender and juicier than regular chops. just cant beat them country fried with gravy but these were rite up there too!

shrooms were done on the grill top rack slow while meat smoked.

love freezing them in water. they come out looking the same as went in freezer.

ill give that a soak for maybe a day. poled it full of holes with fork to help brine penetrate. new test brine/merinade mix of onion, thyme, rosemary, pepper(blk & red), garlic, paprika, salt, sugar, lemon juice, soy sauce, winchester sauce, french dressing, and lil water. i dont normally use lemon juice. i added to maybe help break down, and infuse water with the seasonings. most time i do that with a simmering process but trying to get same results without cooking. in my experience a cooked wet brine will way out perform a regular cold mixed brine. i was pressed for time, as dawn bass bite was gona start. lol

made a batch of breakfast sausage with extra red pepper for morning feasts. she dont like hot either. lol
couple seasoned up (more red pepper n garlic)hard eggs and patty of my sausage mix. im gona feel that later i bet. :0

the spatchcocked yard bird is still soaking in brine. it mite hit the smoke sauna tomorrow?

hitting the store for supplies. lol gona whip up a batch of stirfry with extra fresh ginger(wife not big fan of that either) and hot peppers to feed off the next few days too.

trying to add veggies in here and there. i instantpoted an acorn from the garden last night as bedtime snack. lol amazing how fast and tender it makes them. mite grab cauliflower head and do one of those in there. slather entire head with butter and seasonings. place in istantpot with chicken broth and squeeze for like 6min. comes out soaked with butter and flavor. yum but a gas factory for me. lol lookout morning reveille blasts. hehe

I mean when it comes to smoking anything, you always do what you want?
Mind you my wife does not cook, so she can't complain what's on the table.

I can understand a little bit, my partner can not stand to eat or hardly even smell any strong seafood flavor. I could live on the coast and enjoy a heavy seafood diet, not her, she would starve. I do fried rice on the griddle, half it and put chicken in her half, shrimp in mine. We deep fry outside on the deck batches of stuff to freeze for quick meals, fried fish I catch for me, chicken or pork something for her, onion rings, sliced potatoes, sliced jalapenos, battered vegies etc for reheating later for both of us to have a quick meal. I like to give my dog a can of tuna every once in a while but he normally eats inside. Nope, I run the can through the opener and take the lid off outside for him to eat. Like some perfumes immediately clog my sinuses, a bite of licorice I would spit out before my teeth contacted, even a mistaken swig of a mixed drink of bourbon at a bar instead of rum and coke I ordered almost gags me to throw up. Some smells or tastes do not fit with some people, and have very extreme likes or reactions at times. it seems that farts are unavoidable at times though whether anyone likes them or not.

That would be right. It's always been a case with me that if you don't like my cooking, get out of the house. The kids ate what was on the table or they didn't eat. No opportunity for them to decide what they did, or did not like which I think is instructive... even if it comes after someone gets married.

FWIW, I'm not a huge fan of seafood either but I choke it down. Sometimes you gotta take your own medicine. I mean what do you do in Hong Kong when you're our with a group of people and all there is eat is platters of raw fish and such. Suck it up and drink a lot of sake!🤣

Anyway, sorry for the hijack. I'm glad the OP gets to eat something he wants for a change.

smokinaussie you make it sound like i get fed stuff i dont like normally. thats far from the case. i cook most of our meals and i enjoy them. lol my belly will attest to that :) when she is away i can play with my food so to speak. kick up the heat n smoke. experiment with stuff and only disappoint myself. i tend to like strong flavors like vinegar salt ginger kimchi lol oh the kimchi. ill open it up in the kitchen and she will say whats that smell god. she will be at the other end of the house! lol np on the hijack as you say bud.

so the yard bird is coming out today. drained and set back in fridge to dry off. smokin that baby for dinner. last night was double batch of stirfry with our son. he helped me put up the stands this morning. we scored about a pound of chicken of the woods. that will be good snack with the meal later. maybe i shuold try smoking that with the bird? be plenty more to come yet this year. i like to batter and fry them. either dip in honey mustard or make loaded chicken sandwiches. the samies rock!!! if you werent told you think it was chicken your eating.

i wouldnt harvest and eat so much of it if it was nasty! lol go look for it now till december. easy to see easy to ID safely. plenty of medicinal compounds in them too!

I get it , able to some it to the heat and style that you want.

I am the same, I cook and smoke to the liking of most of the house ladies, but I also experiment a lot with my food . When it is just me eating I step up the heat and kick up the smoke,

But always trying to make Mona and her family enjoy the meal, mostly because I am scared of her she can swing a big cast iron frying pan when needed ,lol
