I just picked up 5 pounds of top round sliced 1/8 inch thick
I have a smoke vault 24
Any advice? Or can it even be done?
I also have a little chief is that a better choice?
What's a good temp for 1/8 inch?
 
Tenderquick is a salt mixture that is used in meat preservation. Can be used for jerky but will be saltier taste than using sodium nitrite.
 
I wouldn't go above 160ºF. You want to dry the jerky not cook it. I have used tenderquick for jerky and it came out great. I would use half the recommended amount and let it cure for a day. 1/8" is pretty thin so it will dry quick. Keep an eye on it.
