I'm rocking a Oklahoma Joe Longhorn I do believe, the one that can be used as a smoker, charcoal grill, and gas grill.

My mom called me yesterday and asked if I could smoke some ribs for a family Christmas which is actually extended family on her side the day before New Year's Eve.

With this smoker I don't have a GIGANTIC cooking grate area. Is it possible for me to fashion a way to stand racks of ribs on edge to get more on at a time and smoke a whole bunch at once? Please forgive my ignorance. To this point I have been using the 3-2-1 method with great results and it would be great to make some food to share with my family, but the quantity is my limiting factor.

Advice is appreciated.

Thanks,
GMO

Kebab skewers -one on each end of each rack of ribs and one in the center.Dose'm all up with rub while laying flat.Put them on the grill grate from front to back to form a "C" with the skewers protruding through the grate to hold them.Make sense?

Weber sells (used to sell?) vertical rib racks that would hold four slabs of ribs on edge in a space not much wider than what is required for a single slab. I've got several of them stashed away with all my other surplus cooking stuff out in the storage corner of my workshop.
