I have played with jerky and summer sausage at various times, but never really seriously. I just picked up a Smokey Mountain propane smoker for FREE, so I have gone gas instead of electric. My first smoke is from Bearcarver's list - beef sticks. I have a smoke generator I made a while back & it looks like it will be perfect with this unit. Sure hope these turn out!

The beef sticks turned out great. The smoker holds temperature a lot better than I would have thought. My smoke generator only needed refilling about every 1-1/2 hours, so it's a pretty painless setup. Gotta go, I'm off to the recipes . . .
