German style Bratwurst with Q-view

    I used Nepas' recipe with a couple changes to suit my taste and what I had on hand. Best I've ever made by far, really liked them.

    5 lb pork shoulder or butt

    3/4lb fat back, as the pork I got was pretty lean.

    1 cup powdered milk.

    2.5 T kosher salt

    1.5 T rubbed sage

    1 TB black pepper

    1/2t ground ginger

    1/4t nutmeg

    1/4 t ground celery seed

    3/4 cup ice cold distilled water

    Hog casing

    Tried to par-freeze the meat in balls to make the stuffing go a little quicker. It didn't work.

    Seriously need a vertical stuffer. Santa, you listening?

    Simmered them then sauteed in butter to give a little snap to the casings.

    Shiraz in a Mason jar. Am I classy or what?

    Looks great to me....cant wait to make sausages!  Mason Jars are good anytime!

  3. Those look fantastic! I need to make some more. I like Mason Jars as "glasses", especially in that case, it holds more!

    That pan shot looks great! And don't knock the Mason jars...they got just as many uses as Duct tape!

    Yeah, the Mason jars are awesome. We've gone through dozens of wine glasses over the years. Dishwasher claimed most of them, clumsiness the rest. Started using the jars as a joke, but they kinda won us over. Best part is my wife is notoriously thrifty, and will try to save an unfinished glass of wine. Can't tell you how many Saran wrapped wine glasses I've knocked over in the refrigerator. With these, just screw the lid on and you're good to go.

    Good job on the Brats and you're gonna love that new stuffer. All that money saved on wine glasses & wine will pay for it. Our 3 year old Lab has the tail wag of death and thinks he can fit between the coffee table and the couch where I 'used' to leave my wine goblets.....sighhhhhhh. So, to solve the breakage and spillage stains on the carpet & couch the GF buys me a child sippy cup to use with a tight fitting lid and a small straw thing coming out the top. I sez 'seriously??' .....so, this is what it's come to.....I've had to revert to sippy cups and now I must be careful not to poke my eye out after a couple cups with the straw....LMAO

    Told my Baby Sis long ago when getting married she should have registered at the Tru-Value for her Mason Glasses.....

    LOL.. long ago when I had my Lab before allowing it out of the truck at someones house, I'd run in and lab proof the breakables at tail level....LOL
