George in Nicaragua - new to smoking

My wife and I have a home in Southern California and a couple homes in Nicaragua.  We Americanized my wife's old home in her village and then bought a small coffee farm and are building a home there.  I will be selling our beach house in Nicaragua as that is not where we enjoy spending most of our time.

For some years I have enjoyed making Italian sausage.  I enjoy good ham and bacon.  I enjoy good coffee.  I might as well become good at the things I enjoy so have decided to build a smoker and learn by reading and trial and error.

I want to learn from the mistakes of others... so I will be looking for advice.

 to SMF!!! We're happy to have you! You're the first person I've seen here from Nicaragua, that's pretty cool! You have come to the right place to learn about smoking and get some good tips on building a smoker, there are a lot of people here who have built all kinds of smokers. There are a lot of sausage makers here too so you should fit right in.
