Have you ever tried the 3-2-1 method or the 2-2-1 method for ribs? The middle "2" involves foiling the ribs usually with some kind of braising liquid like wine or apple juice. I bet that this method would turn your ribs into your favorite dish. I am a baby back person and have used this method only with baby backs, but I am positive it will work with spares. I used this method with my last pork shoulder and it was the best one I have ever had, period.
