Due to the southern influence and the fact that I had been watching alligators all week, I came up with the following recipe.
Chicken leg quarters
Creole seasoning
Buffalo sauce
BBQ sauce
Prepare the leg quarters for cooking by removing the fat and skin if you really want healthy. I leave the skin on. Place them in a large bowl to stir them. Generously sprinkle the creole seasoning over them so they are well coated. Mixing them in the bowl to cover all sides. Place in smoker for about 1 1/4 hours @ 275. I typically use mesquite for these. after about 1 1/4 hours I usually coat some with buffalo sauce and others with the BBQ sauce. Some I just leave plain. My wife who doesn't like hot really enjoyed all 3 flavors. I assumed since these were smoked and not deep fried they were healthier than buffalo wings. This is the way I cook, no exact amounts of anything. Adjust the seasoning to your taste.

It's been hit or miss for me on gator meat. Sometimes it's good but usually chewy. As far as leg quarters, I really like them and they are cheap. Problem is the bride doesn't like dark meat or skin. I've been trying to break her of it but to no avail. OP - do you finish it off on the grill to crisp the skin up a little or is there even a need for it?
