Full Sized Ribs on the Mini Wsm

Since I'm still getting the feel of my mini WSM, I decided to see if I could do 2 St. Louis style slabs. I wasn't able to find my rib rack, so I put on the ol' thinking cap to see what I could come up with. I remember reading some years ago about a SMF member rolling a slab of ribs to get them to fit on his ECB.

I trimmed up my slabs, rubbed them with Tulsa Jeff's Rib Rub, covered them with plastic wrap and put them to bed in the fridge.

I pulled them from the fridge, applied more rub and got the smoker ready. I decided to fold my slabs and use steel kabob skewers to keep the ribs seperated.

Next to see if the skewers fit the pot-
Yep everything fits.

Top of the ribs are above the top of the pot but the lid fits.

After being in the smoker for 4 1/2 hours, it's time to finish them off on the grill with Jeff's BBQ sauce and his mango/ habenero BBQ sauce.

Looks great Dutch!! Only question why finish them on the grill??? Could've put the roll on the coals on the mini!!!

     I've been missing you. Those look like some mighty fine ribs and unless I miss my guess, those are some of your wicked baked beans on the side. Good to hear from you.

Case, not enough room on the mini. Used the grill to speed things up.

Sorry, folks-Ma Dutch made those beans, They lack a few ingredients to bring them up to WBB level, but they are tasty.

Dave- The Boss Admin guy puts all of his Q-view in his newletters.
