Hey guys, I went down to the chiefs game last week and whenever i'm in kc I have to hit up my favortie bbq spot johnny's. They've got an amazing chicken that I saw them do on diners, drive-ins, and dives, which they smoke at first and finish it with a quick bath in the deep fryer.  I'm wanting to try this for myself, my question is would this be unsafe with a brined chicken? I know how a drop of water reacts in a skillet of hot oil, that makes me think a brined chicken could turn into a grenade when frying it.  Does anyone have experience or thoughts on this?  Thanks!

I brine my birds  and then smoke/deep fry them . Always turn out great.

No different than Frying an injected bird ; liquid is liquid and will drip , even if the bird is dryed before immersing in the oil , for SAFETY sake, turn the flame off before you introduce the  Chix and re-start it when the heavy boiling stops.

Just sayin'...

About every Thanksgiving I smoke and fry Turkeys  and usually brine them before they go in the smoker. Doing chicken would pretty much be the same. Smoke the bird to 145-150 then drop it into pre heated 350 degree oil and fry to finish. If your just wanting to brine and fry that will work too just let the bird drain well before putting it into the oil and lower it into the oil very slowly

Great thanks for the info guys! I've smoked a few brined chickens now i'm pretty excited to try a new twist with it, i'll let you know how it turns out. Thanks again!
