Chicken fajita nacho dinner

The original plan was tacos but I started listening to the Yuengling and this happened. we pre-season skinless boneless chicken thighs in 2.5 lb vac bags and freeze them. Makes it quick and easy, I use a cleaver to hammer out the thighs before I take them out of the bag so they grill quick and I get even slices.

Total of 5 lbs

I ate too much last night!

I take my inspiration from a dish that was served at the old Texas Stadium called Superbowl Nachos. Eat a dish of those and you'd have nacho crap up to your elbows. Pretty sure my Emmit jersey is permanently stained.
