Hey guys , got a great deal on a trip tip yesterday so i fired up the smoker today. It came in weighing in at 2.5 lb. seasoned it with Butt Rub and brown sugar, smoked it at 250-275 with hickory/cherry for about 4 hrs. I let it get well done cuz the wife likes her cow dead, regardless it still came out juicy and tender. Paired it with an icy cold'un

I would have pulled it and wrapped 10℉ before the temp you want.... after I cut off a chuck and put it back in for the well-doners. I also like to give well- doners the end pieces if I can.
