I know in my world of cooking fresh is almost always prefered to dried. But in all of the recipes I have seen for BBQ rubs, brines and sauces, I usually will see only dried herbs. Is this due to cost of fresh vs. dried? Availability vs. ease of use? Or is it for some other reason??

Just putting this out to see what the general thoughts are and maybe gain some knowledge.

I think it is because a lot of folks make rubs in large batches and the dried herbs last longer than the fresh ones. If  you are making small craft style batches for a single use then the fresh ones would work - you will just need to use more of them to match the intensity of the dried ones.

In Rubs and Sauces, I find Dry is more accessible, I always have a variety on hand and consistent. Additionally if the recipe calls for a small amount, what is to be done with the rest of the Bunch of Fresh herbs. In Brines I use whatever is on hand and have used both at times. The only fresh herb I have consistently on hand because of frequent use is Thyme...JJ

Fresh herbs just don't seem to work as well in rubs for me but I love them in brines

Even though I have an herb garden, I usually use dried herbs for rubs because of the ease-of-use.
I like fresh herbs for everything else, when available.

I think that another reason folks don't use more fresh herbs is because they don't know how to use them, and most recipes call for dried herbs.

When I post a recipe, it's almost always with dried herbs because that's what most folks are comfortable with.

Many don't know the basic rule-of-thumb....3:1...Fresh:Dry.

my wife and i have found that the FREEZE DRIED herb are far better then the regular dried. and convenient to store.

we did three batches of some sauce we made one with fresh, one with freeze dried and one with reg dried. sure the fresh was top dog but the freeze dried came in awful close to flavor. the third. well how do you compare that to the fresh its like comparing a harley Davidson to say a v star.
