This was a 4 hr make/bake....should say 5 because I went in the fridge for an hour.

I got some of the new cotton rope proofing baskets to try, other bakers are liking them.

Love the color you get on those loaves .
I watch a lot of PBS on Saturdays , and one show was a farm that grew Turkey red hard winter wheat . They had a bakery on site an made sourdough too .
I like that basket .

I've got a few of the enameled roasters back north. I looked at using them for a batard, but the ridges on the bottom held me back.
