Freezing pork fat and trim

ive stored it in my freezer for more than 6 month and didn't really notice a big difference in my smoked bologna but im sure the quality wasn't exactly the same but it wasn't bad as far as rancidity
 
For use in sausage....I'd say bout a month.
I'm curious why you say only a month ?
Fat different than meat ?
I found a steak in the back of a freezer that had been there for 5 years. Was still great.

Keith is a super taster. His palette is a little touchier/sensitive than ours. It would take me well over a month to get thru what I have sitting vacuum sealed in the freezer.
