Just had my 5 liter( 12-15lb.) vertical stuffer delivered and the Directions say to spray with food grade silcone before use. Since I am making sausage at home without all the crap that comes in store bought,Why would I use silicone? Can I use Crisco or lard instead? What do you all use?

FG Silicone is an effective, inert lubricant that is, "...safe to be used on utensils that will come into contact with food that is to be consumed by humans." It last much longer and will not spoil unlike lard or hydrogenated vegetable oils (Crisco). And it requires a considerably less amount to do the job. An industry standard because it works effectively, requires less, and is considered 'safe' by the NSF& FDA.

No harm in using the other solid fats you listed. Personal preference.

You can used crisco or lard to lube things up. BUT these type things will go rancid ( spoil ) after a while. Be sure to clean your stuffer well after using it. I used the silcone spray on my grinder and slicer after use to keep things from rusting after I clean it. The silcone wont go bad or Rancid  over time. 
 
You should be able to find food safe grease to lube the gears and screw at your local restaurant equipment supply.
I use lard to lube the other stuff.

I use Pam spray to lubricate the equipment right before use.... I store my equipment clean and dry as a lubricant will attract dust......
