Does anyone have some advice on Panini maker for a food truck? Needs to be fast but low wattage etc. Any help appreciated.

I think you are asking the impossible - low watts and fast.
Need power for fast recovery time.
I don't use this in a commercial environment but it has worked adequately when making 6-8 sandwiches in a row.
