This is probably a dumb question but I know I can get it straight here. Ive been reading a lil bit about foiling. Never dun it. Im confused about the procedure. Do you wrap it in foil when it pp hits 165 and continue in the smoker till it gets to 200, then let it rest in the cooler. Or is it that at 165 it goes to the cooler and hits 200? Thanks all
 
Foil at 165 then continue to smoke to 200 then into a dry cooler to rest and allow the juices to redistribute. Wrap the foiled butt with an old towel before placing it in the cooler
 
You foil at 165 and bring it up to 200+ in the smoker then it gets put in the cooler to rest. make sure you have some heavy duty foil or wrap it twice so you don't get a leak all over.
 
I just take it to 195* in the smoker then foil/towel wrap in the cooler for how ever long, 1-2 hrs doesn't really matter the time length.
 
Go to the baking supplies isle in the grocery store and get a foil pan that is just big enough to hold the butt or chuck or whatever. When it's time to foil, heave the meat into the foil pan and cover with foil. Be sure to tuck the foil inside of the pan a bit to keep the condensing liquid from leaving the pan..
 
I cook to 200, then foil and throw it in a dry cooler.
Some folks cook to 165 then foil and back on the cooker and pull at 200 and into a cooler.
Try it both ways and see what works for you.
 
Well I decided to foil at 165 and bring to 200 then let it sit in the micro for almost 2 hrs...

To be honest, The meat pulled easier then ever before. But I also noticed that it was a lil mushy. And the burnt ends were just too soft

My next PP I will smoke till 190-195 maybe 200 and foil at that point.

I can see foiling at 165 if your a lil rushed and don't have time for it to sit for more then 1+ hrs.

Until I test the foiling at 195 and sitting like that, I must say that I am for not foiling. But I can see it having a place in the smokers arsenal of expertise.

You may need to try a process a couple times to get a good judgement of it. Your rub, when you rub, do you inject, what you inject all has a play in the way your meat turns out. Some people have to foil at 165-170 just to soften up their barq. MANY different ways of doing, none are wrong and none are right, it's all in your process.
 
I have had a few of my butts get a bit on the mushy side as well so I have two of them in the freezer now and when I smoke them I am going to do one my normal way but pull it around 195 instead of 200+ and place it in the cooler and then he other one I am not foiling at all until it hits around 200 then I will foil and place in the cooler. I have never tried not foiling so I want to see how I like it and normally when I foil my butts I foil at 165 and take them to over 200 well I read a few posts to pull them a bit earlier and you may cut back on some of that mushy meat so I am going to give that a try. Its all about experimentation and finding what YOU like. After all thats all that matters and there are no right or wrong ways as long as you like the ene result.
 
got one going right now, i have never foiled until i take it out of the smoker and let it rest in a cooler, but i think im gonna try foiling today at 165* and take to 200 to see what i like best. kind of hard to do though because i already know for sure i like it without foil. but i wont know till i try.
