I really appreciate all the advice I read here!  I am from Central Illinois and have long appreciated smoking meats. Though my new REC TEC grill is not a true smoker it has been of great success and help to my busy schedule.  I have perfected cooking whole salmon sides on a gas grill and enjoy it but miss the smoke. I have cold smoked before grilling but it is not the same.

Any thoughts on this would be helpful and will post the results!  Thanks and if anyone is fly Fishing in the BV area of colorado this summer chime in!
