Tonight’s story is that of a the goodness of the spontaneous flaming cherry of the Copper Pot VC!
The experience started out by my wife casually informing me that NY’s were on sale for 5.77 per lb. $15.97 for the whole lot.......
So as the boy was treating them with our house SPOG & splash of sugar and lemon pepper......
I watched him and I was lamenting that the X-Fire Grill is stuck in the garage......then an inspirational ray of happiness flooded in as I stared at the Copper Pot Vertical Chamber. I turned to my wife and asked her what the time to the window was and when she said 45 min, I said YES we have time! So I quickly fired up the side burner to start a bed of coals......
then I went to work preparing the for the heavenly flaming cherry smoky goodness.....I have found that when flame searing small splits, flame clean and quick allowing for precise temperature control and timing.
Bingo the bed of coals is properly prepared to do their part! I also found that these coals should be fully developed to just be a base heat source...
While the I was preparing the fire the wife was prepping the skin on red spud garlic onion mash....
Butter sautéed grated onion & garlic
Heavy cream, sour cream & chopped parsley is mixed in with a hand held blender!
As with all good stories things start getting good in the middle.....the magical fire is ready to start creating cherry flavor
In go the mash and the New York’s for there journey in the story.
The side plot of the story is my daughter making a simple & quick beef Marsala shroom sauce. 1/2 grated onion, 4 cloves of garlic sweat in 1/2 tbs of butter & classic olive, 1C each beef broth, Demi, & Marsala.
roux - 1/3 butter & flour cooked till light amber.
This picture is the reflexive moment in the story when you realize a new perspective.....there is a window into heaven creations and yes sometimes there are flames........
the miracle of the searing heat of cherry wood flames is now realized and all to see!
Just a reflective view to ponder what is about to be.....in prep for the finishing sear and final IT
Once the flames have done their work the rack is lowered to 2 inches above the wood coals to do the finishing touch!
After those last few minutes (16 in all) the NY’s are moved to be prepared for the last chapter of their own story of life!
Finally, we are at the final pages of the last chapter of this heart warming unconventional journey of a flaming cherry smoked tasty goodness! As with all good stories the final scenes speak for themselves.......
