I grew up and live in SW Colorado. Chile is a way of life. It can get hot, but it’s that flavor that makes you hungry to eat more. That said, cayenne, ghost peppers, habenero, and the like do not interest me. All heat no flavor. Chile pequine, Chile de arbol, these can get very hot, but the flavors are intense.
I don’t care for super hot food, but a good bite is excepted and desired from flavorful Chile. The rest is just scovile for the sake.
