Chuck roasts were on sale again BOGO free, so I decided to try out my new food saver. I also wanted to try out some new rub that I picked up at Kroger for pretty cheap.
Here's the brown mustard/worcestershire slathered and rubbed roast:
I used a different rub that I mixed up that contained no salt for the other one. I already dry brined both roasts, so it didn't really need more salt from the rub.
It took 14 hours to hit 161 IT. I had already used a full maze of pellets, so I figured it didn't need any more smoke. Here they are when I pulled to wrap in paper:
I'm not sure when they hit 200 IT. I started getting really tired and guestimated the remaining time it would take to get there. Then, I set the MES30 to shut off then and went to sleep. I removed the roasts around the 24 hour mark. I think they had about a 3-3:30 hour rest in there...
It pulled apart very easily with my hands and had great smoke penetration.

I thought they both turned out pretty good. I'll probably do another one or two pretty soon as chuck roasts are on sale for about the same price at a different grocery.
