So... I ended up picking up the MES 30 at Gander Mountain on Thanksgiving. I couldn't pass it up for $129.99. I finally had a free day so I was able to try it out. I started off with some cheese.

Extra sharp cheddar on top, mozzarella on the left, swiss in the middle & a stick of butter I added for good measure...

I took the butter out after 1/2 hr & added some frozen water packs since it was rather warm today. I also threw in some eggs that were in my way...

After 2 hrs I took everything out but one of the extra sharp cheddars - I decided to let it go 3 hrs for comparison.

The other cheese sealed up...

While I was waiting for the last piece of cheese I ran down to my shop & threw together a quick screen.

& covered it with coarse sea salt.

The 3 hr cheese sealed up & ready for the dreaded wait...

While all this was going on & the smoker was heating up I also got some batches of nuts ready to smoke. I used a couple recipes posted by SmokinOhioButcher that I tweaked for myself - Thanks man!

Here are smokehouse style nuts

These are parmesan, onion, garlic...

Here they are in the smoker along with the salt. You can see the AMNPS too - first time using it & it works like a champ!

Updates to follow...

Thanks Martin - I figured I might as well do several different things for its maiden run

Ok the nuts are almost gone already, haven't tried the butter yet, salt is good but next time I will let it go a little longer & the cheese is hidden in my crisper so I don't have to look at it every time I get in the fridge...

EDIT: Forgot about the eggs - they had good smoke flavor in the whites but not in the yolks. Next time I will shell them first & see how that works out...

A full smoker is a happy smoker!!! Looks Great!

I thought I was done smoking for the holiday gift crates, but realized tonight that we have only half the amount of Scarbelly's sweet spicy almonds that we need! Opppsss! Guess that means I'll "Have" to fire up the smoker again!!!

Thanks! & try not to get too bummed out over "having" to fire up your smoker again - that's a tremendous burden to bear!
