hey guys, building my first UDS and everything has gone smoothly so far. just did the burn out last night. 

do people use the bottom rack to store a water pan or pizza pan  when smoking ribs ?

im from Australia, so the biggest drum i could purchased is a 44 gallon drum.

I don't run with a water pan. Tried it once didn't notice much difference. Don't think it's worth the hassle. I don't wrap or mop either. Just pork and smoke.

A fellow aussie! I use a baking tray over my charcoal basket with a few holes drilled in it.. it will give you a more even temp across your grate, protect meat from flare ups and helps to control temp swings at grate level
 
I have been using my UDS for quite awhile now, and always put a cheap foil tray under my food. Keeps from flare ups, greasy smoke, usually add some type of liquid, water, apple juice, etc. also extends the life of the charcoal, as there is usually half left after shutting it down, and snuffing the fire.
