Fellow smokers....

Here are some pics of my fist try at back bacon.

I am amazed that after making this, I can say I have never had real back bacon before.

The flavor and texture was so much better than any version of Canadian bacon I have ever been served before. I am now a spoiled bacon brat. I can never look at another slab of bacon without judgment! Weep for me brothers! :emoji_blush:

Very nice. I just put about 16 lbs. in to brine this morning. You had a beautiful pellicle. I ordinarily do not. I am going to start drying mine longer to get a nice pellicle.
