Smoked my first Trip Tip today and all I can say is baby where have you been all my life?
I did the reverse sear method. I dry rubbed it with kosher salt for 15 minutes then rinsed it off and the rubbed it with a coffee rub of equal parts sugar, seasoning salt and coffee. Then cooked it it an IT of 115 then over direct heat for sear at 2 minutes per side flipping twice for a grill pattern. When I took it off my IT had hit 128 by then.
Wrapped it in peach paper and rested for 15 minutes. My IT hit 145 I wasn't expecting that high a climb but it was a solid medium.
Cut into it and tasted. Wow that is so good! I attached pics from the point of going to the sear because I spaced out taking my begging pics. I look forward to cooking TT again!
