First time pellet snoker here going to try a pork butt tomorrow .... any and all advice is appreciated .... picked up this camp chef for $200 only a year old and gave me a propane tank and three bags of pellets !!!
Welcome to the forum!
A pork butt is one of the most forgiving meats, so good choice for your first attempt.
As far as advice goes... put a good rub on it, close the lid and leave it alone until you hit high 190's. Don't over complicate the process; you'll have plenty of time to experiment with foiling and mopping, etc. as you go.
Lots of options on time and temp for butts. Since you will be on pellet grill there are a couple thought processes.
Rub with a good amount of sweet pork rub.
225 all the way to IT of 200 or so.
I like 180 for 3 hours then 275 till 200 or so. 180 on my rec tec is the high smoke temp, then 275 gets them to the finish a touch faster.
As mentioned, butts are quite forgiving. They are like briskets - they all have a mind of their own and can take a while depending on the size and when it chooses to get done. Plan extra time! I usually just plan to cook, pull and eat next day.
