Well I just finished smoking my very first time! I smoked a rack of baby back ribs at about 300 degrees for almost 3 hours I checked the temp of the meat and it was over 170 degrees( the thermometer only goes to 170). I tasted the meat and it's tender and taste great. However the meat has a pinkish look all the way through. I believe the meat is cooked done but I thought I would ask the experts. It taste good and the meat is very tender. What day you?
 
Pork is safe to eat at 145, so I think your okay.  Ribs need to get to about 190 for the right bite, but you may have gotten close since you were above 170.  I would invest in a good thermometer to monitor smoker temp and meat temp.  Knowing your temps are accurate is crucial to good Q!  Glad your ribs were good.

Welcome to SMF!

If your using a charcoal or wood smoker, the rib meat will be pink from the smoke.

It's called a smoke ring.
