Hello All,

My name is Gus from Washington state. Been wanting to get a smoker for years and finally found an Oklahoma Joe’s offset (Highland model) for the right price. Previous owner already put baffles in, made a custom charcoal basket, lined the bottom with bricks, lowered the chimney intake and sealed the smoke leaks! So I’m pretty much ready to go. Have a 16# brisket in the freezer I want to smoke but I might start out with something a little easier... suggestions?

Howdy and welcome!
Most likely everyone will suggest a pork butt and a chicken butterflied for first couple tries. Little cheaper and easier to do.
Pork butt is kinda the same way most do a brisket. Rub and length of smoke.
I think just to relax and not worry bout the temps staying perfect is best thing to keep in mind.. averages from 225-300 are good.

Have fun and best of luck.. get lots of sleep the day before the smoke and have fun. :)
 
Awesome, thanks. With a 2 year old and a 5 month old “lots of sleep” is a very relative thing, but I’ll try.
 
Almost anything is easier then brisket. If you want easy and quick then meatloaf fit's the bill. That is if you like meatloaf.
