Hello,

Been lurking for a couple days and decided to make my first post a question!

I'm new to competitive cooking and this week I'm entering a BBQ event where as a bonus they pass out a 10lb bag of wings in the AM for you to prepare 'to the best of our abilities' for judging.

Since I've never cooked wings before, and because I will be outside cooking on a smoker from scratch- does anyone have any ideas???  I don't even know what 10 lbs of wings looks like, but it seems like a lot!  Can I fry them in a dutch oven that's sitting on my firebox or would that be too hot?  Any recipes/processes that lend themselves to outdoor cooking?

Thanks in advance!

Hi Ken! Here's a link to how I do wings: http://www.smokingmeatforums.com/t/119306/chicken-wings-buffalo-style-pictures-are-back  and since this is for a comp I would make sure to crisp them up on a hot grill or even a quick fry. The beauty of this recipe is that you can use any sauce or flavor you prefer, the idea is just to get that flavor inside and not just sauce all over the outside. !0lbs is about 25-30 wings.

I see this is your first post here, when you get a minute would you do us a favor and go to Roll Call and introduce yourself so we can get to know you and give you a proper welcome, also would you add your location to your profile, we like knowing where you are when we talk to you, Thanks!

I can vouch that this method really works well and produces a great wing.  Just make sure that the comp allows injection
