First time to make deer summer sausage need some advice.

This is the going to be my first attempt at making summer sausage. I have bought the LEM backwoods summer sausage kit, citric acid packet and the trehalose packet. I am trying to figure how long I should let it rest. I have seen other recipes calling anywhere from overnight to 5 days mixing twice a day. Any help would be appreciated.

Mix seasonings real good once and an over night cure will be fine. Dont mix in the ECA untill right before stuffing.......
