I completed my first spare rib smoke yesterday. I was so excited to bite into them I forgot to take pics. Next time I'll hopefully remember. I smoked 3 racks. Had to cut them in half to get them to fit in my GOSM. I used cherry wood and filled the water pan with half water and half apple juice. I did the 3-2-1 method and occasionally sprayed them down with apple juice when directly on the rack. They were very tender on the inside but I think the bark was a little too tough for my liking. I think next time I will take them out a half hour earlier and see if that will make any difference. But, nonetheless, I had 5 other guests over and there is only maybe a half of a rack left. I put Neely's BBQ sauce out on the table but not a lot of ppl used it so I would say it was a success for my first time. Any suggestions on how to tender up the bark a little bit for next time?
 
The last hour of the 3-2-1 is where the bark is formed. Cut back on the last hour a bit. You may have to check it a few time so see if it is to your liking. If it is very tender after the 2 you will be able to find the bark you are looking for.

My guests and I were so hungry that I forgot to take pics before we started munching them down. Next time i suppose. Glad I was able to do them yesterday. Basically getting snowed in now. Crazy snow storm here in metro detroit.
