I have 50 lbs of bacon and 3 ham steaks that I am smoking. I am really hoping for some quick help. I used Morton sugar cure and everything has been in the fridge for the recommended 8 days. Flipped every day. I have my hams in the smoker now but can someone look at the pic and tell me if the hams are junk? Did they go bad? Did I do something wrong? And if the ham is junk is All of my bacon junk too?
