First time smoking Chicken on WSM - help with wood and seasoning

Hello,

I am smoking my first Chicken soon. I am unsure of what type of wood to use to get the best flavour. I am using the Webber Smokey Mountain.

I have had trouble finding a good bbq smokey dry rub for the chicken. All youtube videos have been pre-made purchased seasonings. SO any advice on best spices to use would be great.

Oak, Hickory, Cherry, Pecan, & Peach all work good for Chicken!

As Al stated there are a bunch of good rub recipes under the chicken thread.

When I was using a WSM, I cooked with RO lump and used cherry chunks for chicken. I really liked the fresh flavor that it gives to the poultry. Now that I'm a stick burner, I use oak or pecan for cooking and still use cherry chunks or splits for flavor. The splits are really a fresher flavor than the chunks, since most of the available chunks are kiln dried and I can split and season the splits myself.

I like cherry and pecan or a 50/50 blend on chicken. First time keep the seasonings simple like you would your oven you can get a better idea how the wood flavors the meat and try rubs later to see what you like or just add a little something each time to your simple seasoning to build your rub the way you want.
