Hello my BBQ people! I am currently curing my smoker and am excited to start using it. I have already experimented with indirect heat smoking on my gas grill (chicken breasts, pork loin, chicken wings) and slow oven "smoking," (pork shoulder and beef brisket) but this is my first time using charcoal and a smoker. I am wondering what the best meat to start with is. I was thinking I would start with a whole chicken but looking for any beginner suggestions. The goal is a pork shoulder for Christmas Day. Thanks!
