First Time Shotgun Shells

Well y'all I decided to make some shotgun shells to go with the Birthday Brisket today. I stuffed the shells last night.
2 lbs 80/20 wagyu burger
1 lb turkey sausage
1/2 cup sharp cheddar
1/2 cup peper jack
Dano Butter Steak seasoning
And my brisket rub
Wrapped with turkey bacon.

I let them sit covered overnight in the fridge and they are now on the pellet grill at 300. I also sprayed them with duck fat and hit the outside with the same brisket rub.

Coating them with Sweet Baby Ray's original. I noticed that the bacon shrank back a ton. Thinking I might need to use beef bacon next time.

The thinner bacon wraps and weaves better. You will always have to account for shrinkage if you're going for pretty, but tasty doesn't care! HAHA
 
Well they taste good but a little tough to bite through. Thinking I either A. Didn't have enough bacon or B. Overcooked them. Overall I will definitely try this again.

Looks very tasty… nice job! And like @kilo charlie recommended… thinner sliced bacon when wrapping is a great way to go! Be it turkey, beef or pork! Again, nice cook! Now you mentioned brisket… gotta go find that thread!
