For my first attempt at smoked salmon I used Bearcarver's Final Smoked Salmon Recipe.
I bought 2.15 lbs of wild-caught coho salmon and soaked them in the brine for 3 hrs.
After brining I let them dry in the fridge overnight.
Here's the salmon going into the smoker.
After 2 hrs of smoke with cherry wood.
After 4 hrs of smoke.
After 5 hrs total. Pulled at 145.
This smoked salmon is marvelous. I see why Bearcarver decided this would be his "final recipe." Next time I make salmon I will follow this recipe again and hopefully I can get better at following Bearcarver's temperature instructions too. I'm very thankful to have found this recipe for my first salmon smoke!
