First time pork shoulder

I was planning on starting tonight at midnight but due to rain I’ll start first thing in the a.m.
got it injected with about 2 cups cherry Dr Pepper, will rub down in morning before it goes on the smoker

940 am and meat is on. I meant to grab a specific butt rub yesterday but ran late at work and had dinner plans. I ended up rubbing it down with SmokinAl SmokinAl pork rub.
Temp is set to 240. Since i injected I decided a couple degrees higher to offset that a little

You might consider higher then that. I had injected two pork butts, maybe 6 ounces each and put them in over night at 225f. After 23 hours, they were reading 190f. Which I pulled them at but in parts were still tough. <Fortunately, they've been ear marked for burritos etc>.

Expect a long haul is all I can say! Winter is here!

My plan is to see in a few hours where it is at temp wise. I’m basing it on 1.5 hours per pound. I expect it to take longer but I’m hoping for around 12-13 hours. It’s 50 degrees here today so hopefully it will be alright
 
5 hours in. Temp is at 140. The winds changed direction and is blowing 15-25 right now, so i bumped the smoker to 275 to help counter.

You might want to do what we did when ice fishing, get bricks and plywood up. Heck, I sorta boxed my smoker in with the bigger grills on the patio before when it was windy!

But I honestly never bother with trying to do a proper time per pound or the like. I always aim to get a pork butt in around 10-Midnight, make sure the pellets are going good, and I sleep. I get up, check temps, crank it up to 250/275 if I have to get it done for dinner.

I’ve moved vehicles around and put my truck behind it to help block the wind, it’s helping a little.
My original plan was to put it on at midnight but we had some good rain overnight.

We just had the typical Wisconsin mix of sleet and then freezing cold and winds. LOL

On the bright side of things, with the wind and smoker set at 275, it’s running an even 250 on both sides of grate.
 
Definitely see myself investing in a thermal blanket sometime. 10 hours in and I’ve hit the pellet alarm twice on my Daniel Boone. Temp has been in mid-upper 40s all day but when the wind kicked up is when I really started chewing through pellets

I use a MES, makes life easier. I don't regret going electric at all!

I was a wood/charcoal only guy, but that takes up so much time to even do a short smoke. I’d had my eye on a green mountain grill for a while but I knew they went on sale Black Friday so got me one this year. I love it. Set and forget essentially. This is my 2nd smoke on it. I did ribs last weekend. Ran about 6 hours and barely used any pellets. Today however with a 20 plus wind and temps in the mid 40s all day, ive has to be generous with pellets lol

12 hours in temp is at 184
Once it reaches temp and I pull it, do I put it in a pan covered in foil, and wrapped in a towel and then into a cooler? Will it stay good out of a fridge til the morning? It will be lunch and dinner tomorrow.
