Got three birds. Backbones removed. Figure Ill cook em whole to save room. Read about coverin the birds with skin from chicken thighs to keep em moist but Ill probably use bacon. Basic brine for chicken should do OK but have read to brine from two hours all the way to overnite. Thats a pretty wide spread. How long do ya'll brine? You never steered me wrong before.
 
the two chickens i did on Turkey day were in the brine for close to 12 hours.... (overnight) they turned out good..... i got the brine from here.... it said 4-6 hrs....
