I was wondering when we would see the test run. Looks good from here.

I'll double hook pork ribs if they have a nick in between bones and I always double hook beef back ribs because they often are trimmed very close. One other option is to use a loop of butchers twine instead of that lower hook.

It's been about 5 1/2 hours and I just checked them, 187 internal temp and not probe tender.
 
I did the same thing in my smokehouse a few years ago! Used bacon hangers!




 
Those are some of the prettiest ribs I’ve seen! Color is spectacular, sauce glistens and the smoke ring is money. Great job!
 
Thx all, these were my best ribs ever, wish I made more.

I can thank the forum for helping me realize probing for tenderness is the key to knowing when to pull meat from heat.

A few years ago I would’ve pulled them off the smoker at post #5, and they would’ve been “good but not great”.
